Napa cabbage x 3
Water
Salt (I’ve used all kinds-any salt will do)
Daikon mix
1 large daikon radish (cut to strips)
2 bunches green onion
3 heads of garlic (1 per head of cabbage)
1/3 cup fish sauce
2 Tbsp light brown sugar
2/3 cup gochugaru (red pepper flakes)
For the cabbage soak- salt the water till it tastes like the ocean. This is what my mom told me, works every time. Set cabbage aside to soak 6-8 hours.
Cut daikon and crush garlic, add everything to a bowl and mix well, set aside until cabbage is ready.
Rinse cabbage 8-10 times to get as much salt out as you can. Rub the cabbage with your daikon mix. Get between each leaf leaving behind a little of the daikon every time until it’s all gone. Jar it and set it outside in a place that only gets partial sunlight throughout the day. I leave mine outside for three days. Enjoy!
